Pantry basics – muesli bars

I read that the first thing to do to save money on groceries is to use up what you already have. This means you can save a lot of money in the first few weeks while you cook through what you already have on hand, and the savings can be used to fund bulk purchases.

Up first are these pantry basics muesli bars, a recipe from Nigella Lawson’s “Express”. You can substitute the seed, nuts and/or fruit for whatever you have in your cupboard.

Mix 250g rolled oats, 75g shredded coconut, 125g mix seed (sesame seed, pepitas, sunflower seed), 100g dried cranberries and 125g unsalted raw crushed peanuts in a bowl with a 375g tin of gently warmed condensed milk. Line a rectangular 23 x 33 cm baking dish with greaseproof paper, tip in the mixture then use another piece of greaseproof paper to firmly press the mixture into the tin. Bake for one hour at 130 degrees Celsius.
