Another pantry basics recipe – Bill Granger’s apple, cherry and almond loaf from “Everyday”.
Soak 50g rolled oats in 300ml milk for 30 minutes. Sift 240g self-raising flour and 1 teaspoon baking powder into the bowl, and add 125g dried cherries, 50g chopped dried apple, 75g soft brown sugar, 1 teaspoon cinnamon, 45g honey or golden syrup, 1 lightly beaten egg, and 40g chopped almonds. Line a 22.5 x 8 x 7.5cm loaf tin with baking paper and pour in the mixture. Top with 30g chopped almonds. Bake for 45 minutes at 180 degrees celcius.
