This uses up wilted forgotten lettuce otherwise destined for the compost.
Heat 2 tablespoons peanut oil in wok and add chopped spring onions and garlic. Fry. Add 1 litre hot stock, 4 tablespoons soy sauce, 2 tablespoons rice wine vinegar and a teaspoon of sugar. Add a bunch of lettuce roughly chopped and simmer for 2 minutes.
