Put 9 springs thyme, 9 Arbol chillies, 9 bay leaves,1 kg peeled garlic cloves and 1.5L olive oil in a large saucepan and put on the lowest heat you can. Gently heat until the oil is gently bubbling then cook for 30 minutes.
When cool, place a spring of thyme, a chilli and a bay leaf into 9 220ml jars. Add garlic then top with the oil. Refrigerate immediately.
Perfect on homemade sourdough.
