Pickled cucumber

Buy a box of ten kilos of cucumbers. This cost me $28.00. Eat two kilos fresh in salads. Recipe adapted from Cornersmith.

Slice eight kilos of cucumber with a mandolin. Put in a large pot with 8 tablespoons maldon salt. Drain in colanders overnight.

In a large stockpot, being to the boil 8L white wine vinegar, 880g caster sugar, 4L water, and 4tsps turmeric.

Meanwhile slice 8 onions and mix into the cucumbers with 4 tablespoons mustard seed, 3 tablespoons fennel seeds and 3 tablespoons dried dill.

Use tongs to spoon the cucumbers, onions and spices into jars. Add 1 teaspoon peppercorns and then fill with the liquid. Seal and heat process for 10 minutes.
