This is a great way to use up a lot of soft cucumbers.
Roughly chop 2 large cucumbers and put in food processor with a clove of garlic and a green chilli (but you can use red if that’s all you has – green is just for colour). Process until smooth. Add 300ml plain yoghurt (I used yoghurt I made with a cream top culture) and 100ml crème fraiche (again I used home made with crème fraiche culture). Add salt to taste and process until smooth. Pour into bowls and top with one cucumber cut into small chunks.
