Stephanie Alexander’s zucchini slice is a great way to use up excess zucchinis.
Slice one onion, then grate 500g zucchini and 170g cheese. Mix in 3 eggs and 150g self-raising flour. Season with salt and pepper. Put in a lined, square baking tray, top with slice tomatoes and drizzle with olive oil. Bake for 30 minutes at 180 degrees celcius.
