Fantastic way to use up eggplants from my food box.
Slice 5-6 eggplants and coat with olive oil using a pastry brush then season. Roast in a baking dish for about 30 minutes at 180 degrees celcius. Pour over 1L home made tomato sauce, and top with grated Parmesan cheese. Roast for 20 minutes at 180 degrees celcius.
